Today I am going to share with you a biryani recipe that is so amazing that cooks with years of experience will be delighted. This biryani is surprisingly easy to prepare, yet packed with great flavors and aromas. You will be amazed how wonderful it is whether you cook it for your family or for a party or special occasion. This is chicken that has been carefully cleaned and prepared. To allow the spices to fully infuse into the chicken, we made cuts in it. Now let's add some spices to the chicken. We have taken one kg of chicken and added one and a half teaspoon of salt (as per taste test) and also half a teaspoon of turmeric powder. Two teaspoons of biryani masala (you can use homemade or store-bought, high-quality brands).

You can use garam masala instead of biryani masala. 200g (about a cup) yogurt, save half a teaspoon for later and add the rest to the chicken. Mix all these ingredients well with the chicken. Add a handful of mint leaves and some finely chopped coriander leaves. Now add the four or five small green chillies we have.

We will also add a tablespoon of boiled water for an amazing aroma. Mix everything well and let it marinate for a minimum of 30 minutes and a maximum of 2 hours. We are going to add 150cc of oil to the next saucepan. Add the following whole spices to the hot oil: Add the following spices to the oil: 5 to 6 cloves, 1 black cardamom, 5 green cardamoms, 1 mace flower, and 2 to 3 small leaves.

We are going to give the spices an oily taste. We are about to add onions. We cut four large onions into thin slices. You can change the quantity of onions according to your taste. This amount of spice is ideal, but you can adjust it if you prefer less.

We'll take out the same amount of onions as they've turned golden, roughly the price of an onion. If there are a few large pieces of masala, don't worry about it. Leave them alone.
The marinated chicken will now be added to the pot. The masala should be cooked well and the oil should separate after stirring vigorously. We will maintain a high flame during this process. We will use the masala left in the bowl and not add any water at this point.
Since the curd will also release some water, add about a quarter cup of water to the bowl in which we marinated the chicken. Be careful not to add too much water. After reducing the heat to medium, cover the saucepan. Continue to check and stir occasionally. The chicken will cook for about 12 to 15 minutes.
We will prepare the rice in between. Along with one kilo of chicken, we have also taken one kilo of rice. It took two hours to soak the rice. Although basmati rice is also an option, we are using golden silla rice. A large pot of water is placed on the stove to boil. Mix three cloves, two green cardamoms, two black cardamoms, two bay leaves and a small piece of cinnamon in water.
We will add enough salt as the rice needs water to be slightly salty. Now that the water is boiling we will remove all the spices as their flavor has permeated the water. You can leave them in if you want. To make sure the rice is fluffy and well distributed, we'll add some mint leaves, two tablespoons of chopped coriander and the juice of half a lemon.
The soaked rice has been drained, and will now be added to the boiling water. When the rice is 80-90% done, boil it on high heat for 7-8 minutes. After 15 minutes of cooking, the chicken is done. The masala should cook well, so we will stir it around and make sure that there is not much water left.
After about seven minutes of boiling, the rice is nice and long. It's practically gone. Half of the rice will be removed from the saucepan and mixed with the chicken. Now we are going to add the fried onions.
These ingredients will make an incredibly delicious biryani. Now add mint leaves, fried onions and red chillies. Then add the remaining rice. Additionally, we will add two to three pinches of food coloring and one tablespoon of ghee. Add a handful or two more mint leaves and cayenne pepper. Using the water we saved the rice from boiling, add half a cup.
We will use aluminum foil to ensure a proper seal. If you don't have foil, you can cover it with a cloth. To guarantee a tight seal, place a lid on top and cover it with something heavy. After two minutes cook on gas burner on medium flame.
When it starts steaming, reduce the heat and continue cooking. To prevent burning, you can place a tawa (griddle) under the pot if the bottom is thin. After switching off the flame let it sit for fifteen minutes so that it steams completely.
We will uncover our biryani to inspect it after 15 minutes. Take a look at our delicious, perfectly prepared Biryani. It comes out perfectly with the grains separating and the masala mixing well.
