Time to start our recipe
Today we will prepare a delicious
vegetable dish called Bottle Gourd Curry. The trick is that kids won't want to
eat this vegetable no matter how long you cook it’s a month or two at most.
Today we are going to do something fun with this vegetable that even kids will
love.

When vegetables are prepared in a
monotonous manner, children often run away from them. So let's prepare this
delicious bottle gourd recipe that will be loved by the youngsters too.

I cleaned, peeled and cut half a
kilo of gourd into small pieces. We chop the vegetables up a bit because the
youngsters often remove them from the plate when we bring them up. It is best
to cut the vegetables into small pieces to prevent children from separating the
gourd or any other vegetable from the spice. Also, four medium-sized tomatoes
and a small onion are required to make a good gravy.

Let's cook now. We are going to add
half a cup of oil in a pan. Next we will add the gourds. We will cook the gourds
first, keeping the flame on medium. We will fry it for about two to three
minutes, or until it turns light golden brown. Here, the gourd will be boiled
to about 80%. Youngsters will love the taste of bottle gourd fried in curry,
which tastes amazing.

This is the color we desire. Now we will remove the gourd. Any vegetable, such
as potatoes or gourds, tastes much better when fried before being added to the
sauce. Look, now we've got Loki out. That's a lot of oil, so I'll cut it here.

Then we will add half spoon ginger garlic paste and cook. All we have to do is get rid of the raw smell. It will be fried for two minutes. As the garlic starts to smell we will add the rest of the ingredients. Now see how the garlic has turned into a beautiful shade and how fragrant the fried garlic is. We're going to add the onion that I just showed you. I cut it finely.
I've thinly sliced the onion, and
we're going to saute it for about a minute to soften it up a bit. When the
onion softens, we are going to add the tomatoes. To make sure the tomatoes cook
faster, I cut them into smaller pieces. I like to add things as they are, but
you can make a paste as an alternative.
We are now going to add the spices.
One tablespoon of red chili powder, half a teaspoon of turmeric, one teaspoon
of ground red chilies, and one tablespoon of salt are the basic spices we will
use. Mix everything well to make sure the tomatoes and spices are well mixed.
The masala will cook well and the tomatoes will soften if I lower the heat and
cook continuously for three to four minutes without adding water.
After you cook it on low heat for
about six minutes, the tomatoes will soften in their juices. Now that the water
has evaporated, I will turn up the heat. Keep cooking it till all the water
evaporates and the masala is well cooked and thickened. Don't worry if there
are still some pieces of tomato left. The masala is ready, as you can see, and
it smells delicious.
Now let's add the bottle gourd. The
gourd only needs an additional 5 to 6 minutes to cook, as it is almost done
(about 75 to 80 percent). Mix it well with masala. I'm going to add half a cup
of water and stir it again to make sure it cooks. This will help the gourd
soften completely.
Then add half a teaspoon of ground
black pepper, one teaspoon of ground cumin, one teaspoon of ground coriander,
and one teaspoon of ground fenugreek leaves (kasoori methi). Mix everything
well to make sure the spices are spread evenly.
We don't want the water to dry out
completely, so keep the heat low. The gourds should be very soft after 5 to 6
minutes, covered, on a low flame. When it's done, the gourd has absorbed all
the flavors so beautifully cooked.
I kept it covered and simmered for
six minutes. When we take off the top, you will see that the gourd is cooked
well but some water is still there. This water needs to be dried. We will add
some additional ingredients in the meantime.
I have some big green chilies here.
They are not exactly spicy, but they have a wonderful smell and a good taste.
Three chopped green chillies will be added by me. I also add a pinch, or about
half a teaspoon, of half a teaspoon of lemon juice to my homemade garam masala.
Finally, we'll sprinkle in some fresh coriander. Stir everything well.
If you prepare it like this, loki
becomes a very tasty and sour dish that kids will love. To properly absorb the
flavors of the recently added ingredients, I will now lower the heat and simmer
for another three minutes.
After three minutes, remove the
lid. You will notice the beautiful aroma coming from the green chilies. For my
part, I love the aroma of those big green chilies. We are going to turn off the
stove now. We have prepared our gourd dish.
Let's transfer it to a platter to
serve. Now you can proceed. If you are sick of eating meat and would like a
flavorful vegetable dish instead, this delicious and flavorful bottle gourd
dish is perfect. It's delicious and spicy, even kids will go crazy for it. I
topped it with a sprinkling of fresh coriander.
I cut the gourd into small pieces,
as you can see. Children often ignore vegetables and only eat spices when we
cut them into large pieces. However, youngsters will no longer ignore the fact
that gourd and masala go well together. They will actually like it more with spice.
